Our Fish
Redfish also known as Red Drum (Sciaenops ocellatus) is a species native to the US Atlantic. Popularized in the 80’s by Chef Paul Prudhomme and other celebrity chefs due to its mild sweet flavor, firm flesh and large moist flakes, the high demand resulted in severe overharvesting of the wild stock and near decimation of the species. In 2007, the federal government stepped in to prohibit commercial fishing and only allow sport fishing.
We are bringing this highly prized fish back to the menu through domestic, land-based RAS (recirculating aquaculture system) production with no compromise of our wild stock, and can offer year-round, consistent quality redfish. This beautiful fish with a distinctive spot pattern on its tail, is not only prized by sports fishermen, but is in high demand by chefs and maintains “Best Choice” status by Seafood Watch.
